Chopped Salad with Grilled Norwegian Haddock

 

 

Pepperlaks Primavera

Yield: 12 servings

Ingredients

12 each Fjord Fresh Haddock Fillets
Salt & pepper as needed
2-1/4 cups Prepared Italian dressing, divided
12 cups Iceberg lettuce
3 cups Tomatoes, diced
3 cups Beets, canned, diced
3 cups Chickpeas, canned, drained
3 cups Cucumbers, diced
1-1/2 cups Provolone cheese, diced

Procedure

1.               Season haddock fillets with salt and pepper. Brush each fillet with a tablespoon of dressing. Grill until cooked through and nicely browned. Let cool.

2.               Toss lettuce, tomatoes, beets, chickpeas, cucumbers and cheese with remaining 12 oz dressing. Dice the cooked haddock fillets and lightly toss with salad mixture. Serve.
