Chopped Salad with Grilled Norwegian Haddock
Yield: 12 servings Ingredients 12 each Fjord Fresh Haddock Fillets Procedure 1.
Season
haddock fillets with salt and pepper. Brush each fillet with a tablespoon of
dressing. Grill until cooked through and nicely browned. Let cool. 2.
Toss
lettuce, tomatoes, beets, chickpeas, cucumbers and cheese with remaining 12
oz dressing. Dice the cooked haddock fillets and lightly toss with salad
mixture. Serve. Average food cost per serving: $1.52
