Baked Halibut with Cheese
2 pounds halibut steaks
salt and pepper
3/4 cup chicken broth
1 tablespoon lemon juice
4 ounces sliced fresh
mushrooms
1/4 cup butter
3 tablespoons flour
1 cup half-and-half
1/2 teaspoon salt
1 cup grated Swiss cheese
6 medium potatoes, halved,
cooked
1/4 cup chopped fresh
parsley
Sprinkle halibut with salt
and pepper; place in a buttered baking dish. Add chicken broth and lemon juice.
Cover and bake at 400° for 15 minutes, or until halibut flakes with a fork.
Remove from oven; drain juices off into a large cup or bowl and set aside.
sauté mushrooms in butter;
blend in flour. Gradually add the reserved poaching liquid and the half and half.
Cook, stirring constantly, until thickened. Blend in salt and Swiss cheese,
stirring until cheese is melted. Place the cooked potatoes around the halibut
steaks. Pour sauce over halibut and potatoes. Return to oven for 10 minutes,
until hot and bubbly.
Halibut recipe serves 4.
